Tasty Homemade Coleslaw

Coleslaw is a very healthy and delicious side dish. Well, at least it can be delicious and healthy, depending on how it’s made. I’ve eaten some really good tasting coleslaw, as well as bad tasting. Unfortunately, some of it tasted so bad that it took great effort to keep myself from regurgitating. While eating coleslaw with our broasted chicken and potatoes in a nearby restaurant, my mom and I took one bite of our coleslaw and both immediately began to feel queasy. The chicken tasted delicious, as did the potatoes, but the coleslaw was dreadful. The waitress came to check on us a few minutes later, and noticing that both our coleslaw bowls remained full, she asked if we’d liked the coleslaw. Not wanting to be rude, we merely nodded our heads and silently wished that we had a dog underneath the table to feed the nauseating coleslaw to.

Coleslaw is so easy to make that I can’t understand how people can get it wrong and make it taste disgusting. It’s also a very healthy dish, with cabbage, carrots and onions, but many people add sugar and specially-made sauce for coleslaw, which contains unnecessary preservatives, additives and ingredients like MSG. These bad ingredients just aren’t healthy and definitely aren’t needed to make coleslaw taste great. Below is a recipe that I created while experimenting one day. It goes well with almost anything-chicken, steak, meatloaf-whatever a person chooses to serve it with.

The Best Homemade Coleslaw

1 small to medium head of cabbage, shredded

1 large carrot, shredded

¼ cup shredded onion

½ to ¾ cup mayonnaise, organic, if possible

1 tablespoon of Agave Nectar

Time-saving version (I call this version my ‘lazy’ version. I use it when I simply don’t feel like pulling out the noisy shredder and and assembling and cleaning the various parts)

1 bag of pre-shredded coleslaw mix (cabbage and carrots)

¼ cup of shredded onions

½ to ¾ cup of mayonnaise, organic, if possible

1 tablespoon of Agave Nectar

Mix all ingredients together in a large bowl. Stir until all ingredients are sufficiently mixed, chill and serve. The amounts may be adjusted according to taste, because when I make it, I don’t measure. I simply toss everything into a bowl, mix and serve!

By using the Agave Nectar, which can be purchased at your local health food store, instead of sugar, this coleslaw is great for diabetics, those attempting to lose weight, or anyone else looking to keep their carbohydrates to a minimum. Agave Nectar tastes so much like sugar that many people can’t tell the difference. Since the nectar is low glycemic, it will not cause an undesirable rise in blood sugar, which is a definite plus for many individuals. All they have to do is enjoy this coleslaw, without any worries.
