I just wanted to tell you about a dish that you can never go wrong with. It’s called KP’s Enchiladas! It’s not like the Mexican enchiladas that you get in a Mexican restaurant it’s kind of like a casserole that you bake. Let me start by telling you what you have to have.
About 3 lbs. or more of hamburger meat
One can of mushroom soup
8 oz. of sour cream
A pack of about 8 tortillas
A can of spaghetti sauce of your choice (we like Del Monte Four Cheese) but doesn’t really matter just whatever you like
1 pack of taco seasoning
2 packs of shredded cheese (Again this goes back to what kind you like)
Black Pepper, Salt, and Garlic Salt to taste
How to Prepare it:
Preheat the Oven to about 350 degrees. You will need a cake pan about 13 by 9 that is deep. Size really doesn’t matter just as long as it is deep. Spray the pan (cooking spray works better than oil) and set the pan off to the side. Brown 3 lbs. of hamburger meat in a skillet and add the pepper, salt, and garlic. Drain the meat and then return it to the pan. Add the taco seasoning and the appropriate amount of water the pack calls for. It will say one pack for each pound but I usually only put one pack no matter how many pounds. Once the meat is simmering take it off the heat and mix the meat, the soup (no water added), the sour cream, and one pack of shredded cheese together. Place your tortilla on a plate and place the meat mixture in the middle of the tortilla. Wrap the tortilla up like a burrito and place it in the greased cake pan. Now you are going to use the remaining meat mixture to add on top with the spaghetti sauce so don’t the whole pan. Continue to lay each tortilla down side by side until the pan is covered. Try not to lay them on top of each other. Take the remaining meat mixture and add the spaghetti sauce to it. Spread it on top of the tortilla wraps in the pan and put it in the oven. You are going to put cheese on top but not yet. Let it cook for about 15 minutes just so the cheese will be good and melted. Once it is add the second pack of cheese to the top of the dish and stick it back in the oven until that cheese on top is melted. Take it out of oven and serve it with some garlic bread and some salad and everyone will enjoy it.
If you have someone that you know doesn’t like cheese, you don’t have to add the cheese in the meat mixture. You can play around with this recipe by adding onions or anything else you might think will taste good with this. It’s been a big hit at all the parties I’ve went to. Most people who know I’m coming to a party request that I make this. So try it out and see how people will rave about your cooking!
